Jane Vail grew up in Miami Florida and went to University of Florida for Accounting. In 1999 Jane went to work for Chef Norman Van Aken at his award winning restaurant in Coral Gables Florida as the Controller. In 2001 Chef Norman teamed up with Carl Burggemeier to expand Norman’s New World Cuisine in Florida & California, so in 2003 Jane help open Norman’s at the Ritz Carlton in Orlando followed by Mundo at the Village of Merrick Park, and then Norman’s on Sunset in West Hollywood. While in LA Jane also consulted for Sona Restaurant, Boule Bakery, and Comme Ca restaurant in Beverly Hills. In 2009 Jane decided to move to Orlando and became the Controller for Tavern on the Lake in Metro West. Jane took a break from the restaurant business in 2010, but gladly accepted the offer to become part of the team to set up and run The Encore Club at Reunion.
