Jason Hernandez was first introduced into the restaurant industry in 2004, working at a local Country Club. It didn’t take long for Jason to discover that his passion was in the Food and Beverage Industry. He worked his way up in the industry through every position imaginable, from dishwasher to Front of the House Manager to Executive Chef. He is a true Jack of all Trades, and appreciates every aspect of operations. Most recently he was employed at RusTeak Restaurant and Wine Bar, and as Sous Chef, mentored under two Owner Graduates of the Culinary institute of America. At RusTeak he was able to fine tune his culinary skills and expand his creativity through the understanding of spirits and fine wines. Upon leaving RusTeak he accepted the position of Executive Chef at a Blue Star Resort property in Orlando. Most recently, Jason enthusiastically joined the opening Encore team as the Food & Beverage Director. From day one, he values the company’s dedication to their guests and strives to make Encore the number one vacation and dining choice for vacationers around the world. Jason also plans to continue his formal education and eventually obtain a MBA from Crummer Graduate School at Rollins College.
